My name is Esther,and I had always been captivated by my Cameroonian heritage, but it was during my teenage years, while visiting my grandmother Agatha.E in West African Cameroon,Precisely in Mamfe that I truly began to connect with my roots. One of the most memorable experiences was learning to cook the traditional dish of rice and white beans.
As a teenager, I was eager to soak up the culinary wisdom of my grandmother. In my grandmother's cozy kitchen, the air was filled with the rich aromas of spices and simmering pots, while colorful ingredients were spread across the worn wooden table. I had a particular interest in adding my own modern twist to this classic dish.
Agatha, a wise and patient woman, handed me an apron with a knowing smile. "Today, we'll prepare a pot of rice and white beans," she said. "But we can make it your way, with a modern twist."
My heart swelled with gratitude and excitement as I donned the apron. I watched as my granny meticulously washed the rice, emphasizing the importance of cleanliness in Cameroonian cooking. I took careful notes, realizing that the foundation of my modern twist should begin with respect for tradition.
With the rice ready, my granny set it aside, and together, we started preparing the white beans. I couldn't help but notice my grandmother's masterful use of traditional ingredients and spices, and the way she blended to create an exquisite aroma. This was the essence I wanted to honor while adding my own creative flair.
While the white beans simmered, my granny gently guided me and encouraged me to infuse the dish with my own personal touch. I decided to introduce some of my favorite herbs and spices I had discovered during my upbringing in a different part of the world. I reached for fresh herbs and a hint of chili, adding a touch of uniqueness to the dish.
As we shared stories and laughter, my granny approved of my modern twist, acknowledging that traditions could evolve while still preserving the core essence. When the rice and white beans were ready, I served the dish in a beautiful, modern serving bowl.
Years passed, and I continued to cook my unique version of rice and white beans. My modern twist incorporated diverse flavors, reflecting my journey and experiences from around the world.I had managed to blend tradition and innovation, keeping my Cameroonian heritage alive in my own way.
The dish became a favorite to some of my family members, and whenever I prepared it, the comforting aroma and flavors brought Me back to that sunny Cameroonian kitchen where I had first learned the art of cooking from my beloved grandmother. My modern twist had not just added a personal touch; it had enriched the family's culinary traditions, ensuring that the flavors of the past remained a cherished part of the future.
RICE & BEAN STORY


INSTRUCTIONS
1 :In pot or rice cooker, prepare rice according to package directions.
2 :In a separate soup pot, boiled the bean for about 1:30 minutes add water according till the beean is cooked,
drained the water from the cooked white bean using a colander or cullender.
3 : At this stage , while boiling the beans prep your ingredients. sliced smoked fish into pieces,blend tomatoes,
blend all the other ingredients together.
4 :Take a pan and start getting it hot. Add a drizzle of vegetable oil to coat the bottom. Add the onion and a pinch of salt
saute until the onion starts to become golden, about 3 minutes. Add blended tomatoes and 1 tbs seasoning powder allow to
cooked for 10 minutes while stiring,to prevent it from sticking and burned out towards the end.
Add sliced carrots,smoked fish and shrimp,
5 :Allow the shrimp to cooked just for 1 minute. Then, take it out from the pot.
Reason: you don't want your shrimp to be like a rubber lol.
6 :After 10 minutes,add the boiled white beans and stir with care,
7 :At this stage, add the blended mixed spices eg Add garlic, onion, bell pepper,
Add enough broth (start with 1 cups and add more as needed). Cover and simmer about 5 minutes.
Check flavor and add more seasonings or hot sauce if needed.
Simmer uncovered for at least 10 minutes before serving over hot rice or seperate.
